¼ cup milk
1 tsp salt
¼ cup shredded cheese
¼ cup salsa
¼ cup diced onion
1 can black beans, drained
1 can whole kernel corn, drained
Scramble eggs over medium-high heat in a small amount of butter, margarine, or oil. Stir in the milk and salt before the eggs start to set. When the eggs are nearly ready, sprinkle on the shredded cheese.
In a separate pan, heat the beans, onion, corn, and salsa. Spoon this mixture on top of the eggs to create the Mex Mix Breakfast Scramble.
